Recipe: Cheese and Fruit Kebabs

Servings: 4 Kebabs
Ingredients:
6 Mini Babybel® Lite Cheese
1 cup pineapple, cut into chunks
1 cup strawberries, sliced in half
1 cup Red Grapes
4-8 to 10-inch bamboo skewers
Directions:
Cut each Mini Babybel ® in half, making 12 pieces. Place one piece of cheese on the skewer. Add fruit of your choice next on the skewer. Alternate cheese and fruit until Kebab is complete.
Recipe: Mango Tango Salmon Salad

Servings: 4 (entrée sized) 8 (side dish sized)
Ingredients:
4 3-4 ounce salmon filets
1 cup Mango, diced
½ cup fresh or canned pineapple chunks packed in water
¼ cup roasted red peppers, sliced
¼ cup red onion, julienne
4 tomatoes, quartered
4 tbs pickled peppers (mild), sliced
4 tbs fresh oregano leaves
2 heads Romaine lettuce, chopped
¾ cup Catalina Dressing
For Garnish:
2 tablespoons toasted sunflower seed kernels, unsalted
1 lime, quartered
Directions:
Broil salmon filets until done. While filets cook, toss remaining ingredients in a large bowl and dress with Catalina dressing. Chop salmon into bite size pieces and mix into salad. Garnish with sunflower seed kernels and a lime wedges.
