Main meal: Veggie stri-fry or veggie lo mein. For this, you can use frozen veggies (specifically stating that they are for a stri-fry) and then add others to it such as: pineapple, bean sprouts, snow peas, water chestnuts, bok choy, and mushrooms. For the bed, you can just use instant brown rice (much better for you than white). Or, if you prefer to have lo mein noodles, you would have to go to an Asian grocery store for them. If you don't want to go the authentic route, you can always just subsititue whole wheat spaghetti noodles.
Dessert: A light pound cake with fresh fruit on top. This is always nice...you can put strawberries, raspberries or blueberries.
Snacks: Hummus is great with pita bread or pita chips. You could also snack on baby carrots, cucumber slices, fresh fruit (like watermelon, bananas, cantaloupe, kiwi, etc.).
