Healthy Cooking: How to Steam Shrimp and Vegetables with a Kick!
At EndlessBeauty.com, we know steaming your vegetables can me a bit mundane. Chandler Rothbard, our Southwest chef, is here to show you how you can spice up your steamed shrimp and vegetables, while keeping your meal super healthy.
With a Lemongrass ginger broth, your steamed shrimp and vegetable dish will be full of tangy, delicious flavor. Give this healthy recipe a try – you’ll never steam with boring old water again!
Recipe:
For shrimp and vegetables:
1.5lb – Shrimp, shelled and deveined
4 ea – Carrots, julienned
1 ea – Zucchini, diced
2 ea – Yellow Squash, diced
2 ea – Broccoli Crowns, cleaned
Noodles of your choice
For Broth:
1 stalk – Lemongrass
1 Tbsp – Ginger, minced
3 cloves – Garlic, minced
2 ea -Scallion, sliced
1 ea – Dried Chili, whole
2 stalks – Celery small, diced
2 Tbsp – Cilantro, Chopped
1 ea – Lime, squeezed for juice
Water – enough to come up to the bottom of your steaming device
1 Tbsp – Hoisin Sauce
1 Tbsp – Fish Sauce
1 Tbsp – Chili Paste (Sambal Oelek)
2-3oz – Coconut Milk, optional
