In this video Celina shows you how to cook and prepare stuffed mushrooms. This easy recipe is perfect for parties, hors d’oevres and much more. Celina uses a local goat’s milk feta cheese, crimini mushrooms, and fresh basil from her garden.

Like most of Celina’s cooking, this recipe is gluten-free. It’s not only a smart way to cook but because of the nutrition and health benefits it’s smart food. Celina’s magic in the kitchen always is always delightful, and she always shares her wisdom and secrets to healthy, super easy cooking.

Recipe:
- Remove inside of mushroom caps and place on a cooking sheet covered with coconut oil
- Line the inside of the mushroom caps with fresh basil leaves
- Place feta cheese and sliced tomatoes (optional) inside the mushroom
- Cook at 350 degrees for 20-25 minutes (or until they are nice and juicy!)
- Add a taste of Sun-Dried Tomato Pesto Oil (recipe in an upcoming video)

Recipe: Cheese and Fruit Kebabs

Servings: 4 Kebabs

Ingredients:
6 Mini Babybel® Lite Cheese
1 cup pineapple, cut into chunks
1 cup strawberries, sliced in half
1 cup Red Grapes
4-8 to 10-inch bamboo skewers

Directions:
Cut each Mini Babybel ® in half, making 12 pieces. Place one piece of cheese on the skewer. Add fruit of your choice next on the skewer. Alternate cheese and fruit until Kebab is complete.

Recipe: Mango Tango Salmon Salad
Chef: David Grotto
Servings: 4 (entrée sized) 8 (side dish sized)

Ingredients:
4 3-4 ounce salmon filets
1 cup Mango, diced
½ cup fresh or canned pineapple chunks packed in water
¼ cup roasted red peppers, sliced
¼ cup red onion, julienne
4 tomatoes, quartered
4 tbs pickled peppers (mild), sliced
4 tbs fresh oregano leaves
2 heads Romaine lettuce, chopped
¾ cup Catalina Dressing
For Garnish:
2 tablespoons toasted sunflower seed kernels, unsalted
1 lime, quartered

Directions:
Broil salmon filets until done. While filets cook, toss remaining ingredients in a large bowl and dress with Catalina dressing. Chop salmon into bite size pieces and mix into salad. Garnish with sunflower seed kernels and a lime wedges.

270 Calories, 4g Total Fat, 1g Sat Fat, 55mg Cholesterol, 340mg Sodium, 32g Carbs, 5g Fiber, 26g Protein
