0 Vegan Recipe Author Ellen Jaffe Jones Shares Her Vegetarian Health Storyhttp://vegcoach.com – Eat Vegan On $4 A Day author Ellen Jaffe Jones gives her story as to why she went vegetarian, then vegan. It began as way to improve her health as she witnessed most of her family suffering from a number of diseases, including cancer. At one point she went off her plant-based diet, only discover her own health deteriorate to the point of landing in the emergency room. Yet, when she went back to eating plants, her health regained. She also explains where her protein comes from, and what she does about vitamin B12. She concludes the video with why she wrote her book: because she watched on TV a welfare recipient explain that welfare money was not enough money to eat healthfully. Eat Vegan On $4 A Day shatters that myth by showing us how we can buy whole plant foods from the produce section as well as beans and grains in the bulk section of our grocery stores and that when we cook this food from scratch, we can most certainly afford to eat healthy while on a budget.

Healthy Meatless Burgers with Vegetarian Chef Vic

Chef Vic is a biker, a rocker, and tough guy but he’s also a dedicated vegetarian. In the pilot for “Convicted” Vic, assisted by his Mom, Linda, prepares easy to make and delicious veggie burgers using Yves Veggie Ground Round. Vic demonstrates the ease with which a Yves meal might be prepared, as the meatless ingredients are already precooked and only need to be warmed before being ready to devour.

Vic also challenges preconceived notions with regard to what eating meatless means, and emphasizes the importance of heart health for the whole family.

Recipe:
(Burgers)
Combine in one bowl – 12oz of Yves veggie ground round, 1/8 cup of chopped onions, 1/4 cup of breadcrumbs, 2tsp soy sauce, a dash of pepper – mix together, Form burgers into hand sized patties and broil for 2-3 minutes on each side or cook in a frying an over a medium flame until brown.

(Horseradish Sauce)
combine in a bowl – 8oz sour cream, 1tbsp of white horseradish, 1tbsp of whipping cream, 1/2tsp of hot sauce, 1/2 tsp of worcestershire sauce, 1/2tsp salt, dash of pepper – mix and serve
